Mild Gingerbread Recipe

I have gone a little gingerbread crazy this Christmas. I'd never made it before a few weeks ago and now I seem to be making a batch a week.

So why haven't I put on any weight? Well, because I don't actually eat gingerbread. I don't like ginger! But I love the way the house smells when I'm baking it.

I've been playing with a few recipes and having a bit of a tinker to try and make a mild version that I can eat and I've come up with this one.

Mild Gingerbread Recipe
(for those who get their spice elsewhere in life)

  • 120g room temperature butter
  • 100g brown sugar
  • 1 tsp vanilla essence
  • 1 large egg
  • 100g golden syrup
  • 3 cups of plain flour
  • 2 tsp baking powder
  • 1/2 tbsp ginger
  • 1/2 tbsp cinnamon
  • pinch of nutmeg

  • Cream butter, sugar and vanilla on high speed
  • Beat in egg and golden syrup on medium speed
  • Sift in flour and baking powder
  • Add in ginger, cinnamon and nutmeg then stir to combine
  • Cover and refrigerate for an hour to firm the dough
  • Roll out dough between two sheets of baking paper and cut however you like
  • Bake at 180C for 10 minutes (or longer depending on how thick you like your gingerbread!) until golden brown at the edges
I've not tried a gingerbread house yet I've been too busy with the gingerbread men (above), an army of gingerbread Santas:

And an edible centrepiece Christmas tree just like the shortbread one:

Do you love or hate gingerbread?

  1. I hate ginger but love gingerbread.

But I won't ask you to send me any cause I waited 4 weeks at my letterbox for those bloody oreo whatthefuckeversIforgotcauseIlostmymindwaiting things to arrive.

    I cried.  True story

  2. i don't mind me the odd piece of gingerbread but have never made any myself - you may have just inspired me to do some baking Miss Glow!

    p.s. Foooooooooooooood Bloggggggggggggggggggger!

p.p.s I can't believe you made Kelley cry, you meanie, you should really send her some Gingerbread ;-)

  3. I do like gingerbread, and I have cooked it but not since my boys were little. I've even made a gingerbread house... way back before they became fashionable.

You're gingerbread baking has inspired me, I think I might bake some today. Just for 'old times sake'!

Off to find some cookie cutters...

  4. I am a.. I could eat it or I could leave it.. when it comes to Gingerbread.. if its made by my mum I usually eat it.. if its made in a shop I usually dont.. pending on what it is.. and what it is served with :)

Going to make Gingerbread men today!! :) Do u put ur smarties on before or after cooking? I have a bag of green n red m&ms to use up!

  5. I've tried both, sticking them on with icing and putting them on before (the picture up there is a before) and I like the way they embed a little bit with the before.

  6. Inspiring two people to bake in one post? OMG I am becoming a food blogger!!!

P.S. That chick cries over everything :P

  7. You know how much I love you? So much that I'd consider couriering this to you on the other side of the country.

Unfortunately I'm a tight ass so I'd just consider, not actually do. Hehe. xxx
